super simple bruschetta

  • Sliced baguette

  • 3 tablespoons extra virgin olive oil, divided

  • 2 medium tomatoes, diced

  • 1 teaspoon grated ginger

  • 1 teaspoon kosher salt

  • 1/2 teaspoon freshly grated black pepper

  • 5 basil leaves

  • Parmesan cheese sliced with a vegetable peeler

Preheat the oven to 350 degrees F. Brush the slices of baguette with 1 tablespoon of the extra virgin olive and toast in the oven until golden brown, about 5-7 minutes. Remove from the oven and allow to cool.

Place the tomatoes, garlic, salt, pepper, basil and remaining olive oil together in a mixing bowl. Place a bit of the tomato mixture on each slice of baguette, top with a slice of the parmesan cheese and, a bit of salt and pepper and transfer to a serving dish. Serve at room temperature.
