Noodles with Spicy Peanut Sauce

1/2 cup creamy peanut butter

1/4 cup plus 1 tablespoon water 

3 tablespoons low sodium soy sauce

1 tablespoon sriracha or other chili oil 

1 teaspoon grated garlic

1 teaspoon grated ginger

1/2 teaspoon kosher salt 

1/4 teaspoon freshly ground black pepper

1 pound pad thai or other Asian style noodles

In a large glass 4-cup measuring cup or mixing bowl whisk together the peanut butter, water, soy sauce, sriracha, garlic, ginger, salt and black pepper. Set aside. 

Bring a large pot of water to boil and season heavily with salt. Add the noodles and cook according to the package directions. Strain the noodles and rinse under warm water to remove excess starch. 

Place the noodles in a mixing bowl and pour in enough peanut sauce to moisten. Toss to combine. Add in any desired vegetables or cooked protein such as tofu, chicken, or beef. Toss to combine and serve.
