Lemon Sugar Cookies

Makes 9-10 large cookies

1 1/2 all purpose flour

1 teaspoon baking powder 

1 teaspoon kosher salt 

1 1/2 sticks unsalted butter at room temperature

1 1/4 cups granulated sugar

1 teaspoon vanilla extract.

3 tablespoons lemon zest

Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper and set aside. 

Whisk together the all purpose flour, baking powder, and kosher salt in a mixing bowl and set aside. 

Place the butter, sugar, and vanilla in the bowl of a stand mixer fitted with a paddle attachment. Turn the mixer on low then increase the speed to medium and whip the mixture until light in color, about 1 minute. Turn the speed down to low and slowly add the dry ingredients then the lemon zest to the bowl and mix until just combined. Turn off the mixer and incorporate and unmixed ingredients at the bottom of the bowl.

Use an ice cream scoop to drop rounded balls of dough onto the parchment lined baking sheets. Bake for 12 minutes, rotating the pans halfway through cooking. Allow to cool on the baking sheet before transferring to a cooling rack.
