Coconut Rice

with Peas and Cilantro

  • 1 1/4 cup basmati rice

  • 1 1/2 cups coconut milk 

  • 1 cup water 

  • 1 teaspoon kosher salt 

  • 1 cup frozen peas

  • 1/4 cup cilantro, chopped 

  • Lime wedges for garnish

Place the dry basmati rice in a mesh strainer and rinse until the water runs clear. Place the rice in a pot with the coconut milk, water, and salt and bring the mixture to a boil, about 5 minutes. Reduce the heat, cover, and simmer for 10 more minutes or until the liquid is absorbed into the rice. Pour the frozen peas on top of the rice and cover again to allow the peas to defrost. When all the peas are defrosted, about 3 minutes, fluff the rice and peas with a fork to combine. Mix in the cilantro and serve with wedges of lime.
